The Chef Roberto Abbadati presents us with a reinterpretation by Geronimo (on the drink list at SoulMath Society under the name In a Barrel) of the classic Gold Rush cocktail, a bourbon sour with syrupCedarwood essential oil and some spray of Essentia Red Spruce.

5cl Bourbon Whiskey
2.5 cl lemon juice
1.5 cl multi-flower honey
1 egg white (or 10ml of faba water if desired)
1 drop cedarwood essential oil
1 splash of Essentia spruce
Dissolve the honey in the lemon juice and add the essential oil.
empty into the shaker together with the Bourbon and the egg white
Fill with ice cubes and close the shaker tightly
shake the shaker vigorously for about 20 seconds
open and filter into a chilled glass (with or without ice at your discretion), sprayed first with Essentia.
