Dill Marinated Salmon Canapé with Oyster Vodkatini

We present our marinated salmon canapé with Dill essential oil, accompanied by an oyster vodkatini for a delicious and refreshing contrast.

INGREDIENTS

Doses for about twenty canapés:

about 300g of fresh salmon (a piece of fillet, without bones, spines, skin and grey parts)

100g of coarse salt

30g brown sugar
1 tablespoon fresh dill
1 tablespoon dried pink berries
about 100g of soft butter, whipped into a foam

5 slices of soft sandwich bread, from which you obtain 4 disks each using a pastry cutter

Dosage for a single drink:

5.5cl Grey Goose vodka

1.5cl Noilly Prat Original Dry

1 “fine de binic” oyster, with its water (the second water, not the first which should be thrown away)

Prepare the canapés

Mix salt and sugar and use this mixture to cover the salmon fillet piece, top and bottom, and leave it to marinate in the refrigerator for about 8 hours;

rinse the fillet well, removing all traces of salt and sugar, dry it thoroughly, dust it and rub it with the pink berries, wrap it in a sheet of baking paper and, if you have the availability, vacuum-pack it and leave it to rest for 12 hours in the refrigerator;

Meanwhile prepare some dill butter, dilute a drop of Dill essential oil in the whipped butter.

Slice the fillet and, with each strip of salmon, garnish a buttered canapé;

Just before serving, spray Essentia | Lemon on the canapé tray

Prepare the drink:

Fill a mixing glass with ice, add a splash of ESSENTIA | Lemon, pour in the vermouth and oyster water, stir about twenty times with the stirrer, throw away the liquid and keep the ice;

Now add the vodka, stir again for another twenty revolutions with the stirrer, filter with the strainer into a chilled cocktail glass

Garnish with the oyster and two sprays of Essentia | Lemon

Serve immediately.
