procedure

The Vivi Margarita is a tribute to the most iconic and classic Tequila cocktail, the Margarita.
The inspiration came from finding the perfect balance between the combination of traditional techniques, modern ingredients and sustainability behind this Mezzanin classic.
We save all the peels, rinds and scraps of five different citrus fruits used during the service, which are preserved for a fermentation process called lacto-fermentation flavored with honey.
Salt is added and, after a few days of rest, the fermentation is concluded with honey and mixed with Chinotto liqueur.
These are then mixed with our house blend of agave spirits, served in a chilled glass with a rim of salted Tajin, over the rocks and finished with a splash of Essentia | Cedar Wood.
