In Enrico's reinterpreted recipe, we see the use of Bitter Select, a blend of orange and mandarin juice and a surprising addition, blueberry foam, all harmoniously married with Essentia | Bitter Orange for an unexpected finishing touch.

INGREDIENTS

40ml Bitter Select
40ml mandarin juice
40ml orange juice
1 spray of blueberry and pomegranate foam
2 spray Essentia | Bitter Orange

procedure

Pour into a Parisian Fill the ingredients with ice, don't forget to include the foam to give your drink a sophisticated and elegant consistency and shake vigorously.
Pour gently into your highball glass, previously filled with ice, and finish with a magic touch: two splashes of Essentia | Bitter Orange which will enhance its flavour.

To obtain a perfect foam, following the classic methods, you can rely on the use of a whipped cream siphon all you need to do is add a couple of gelatine leaves to the blueberry juice and leave to cool in the fridge for a few hours.
This will not only add a touch of class to your creation but will allow you to experiment with textures that will surprise your guests.
