INGREDIENTS

  • 3 eggs + 2 yolks
  • 110g melted butter
  • 100g sugar
  • 50g 00 flour, sifted
  • 40g almond flour
  • 4g baking powder, or bicarbonate 3g salt
  • Bergamot Essential Oil

procedure

Whip the eggs, egg yolks, sugar and salt until frothy.
Gently incorporate the flour, almond flour and yeast

Then add the melted butter, in which 4-5 drops (be careful, no more!) of essential oil have been dropped.

Mix gently, cover with cling film and leave to rest in the fridge for at least 12 hours

Remove from the fridge, use a spoon to place a little of the mixture into the appropriate moulds, leave to warm up for about ten minutes
Bake at 210°C for 3 minutes, then turn off and wait for the madeleines to rise and crack (about a couple of minutes), turn the oven back on to 190°C and leave to cook for another 3 minutes or so.
Remove and serve slightly warm if desired.
